  1. Roast 1/2 coconut with table spoon coconut oil till golden, keep aside.
  2. Boil 1/2 gallon of water with salt and 1 tablespoon coconut oil. Add 3/4 cup of grated coconut and cook till thick.
  3. Add 3/4 cup of grated coconut to the boiling mixture, stirring occasionally. Let it cook for a while until the mixture thickens further.
  4. Add 1/2 onion (chopped), 3-5 minced garlic cloves, and a small piece of grated ginger to the thickening mixture.
  5. Stir everything and cook until the ingredients are well-blended and the mixture becomes thick and slightly brown on the sides of the pan.
  6. Cool the mixture slightly before adding the curry leaves. Stir them in and let the flavors infuse. In a separate pan, heat oil over medium-high heat.
  7. Add the 16 pre-made vadas to the hot oil and fry until golden brown on all sides.
  8. Once the vadas are crispy and golden, serve them with the prepared coconut mixture.
